So you’ve heard of the Cruffin, right? Part croissant, part muffin.
Breathtaking, right? Just a glance at these golden, flakey, buttery rounds of pastry is enough to make us not groan at the mention of yet another Cronut knock-off. There have been so many!
But the Cruffin — basically a muffin made with croissant dough– has been in a league of its own. The first known Cruffin to be created was by an Aussie, Kate Reid of Lune Croissanterie in Melbourne, in 2013.
The Cruffin was popularised in San Francisco by Australian pastry chef Ry Stephen and co-owner Aaron Caddel of Mr. Holmes Bakehouse in November 2014. Lines formed for a taste. In March 2015, Stephen claims the store was broken into and the recipe binders that hold the recipe for Cruffins, and 230 other recipes, were stolen. Other things such as money, baking equipment, an iPad, computers were left untouched, and no one was ever charged!! This thing is all-around known to be awesome. Almost worth a trip to Melbourne or even San Francisco for a taste!
The Cruffin baked and then (secretly) filled with a variety of creams, jams, crème pâtissières or curds and then garnished.

All classes & workshops are conducted ‘hands on’. No prior cooking skills are required. To ensure personal tuition our classes are kept small, from minimum of 8 to maximum of 16. For safety reason, we require all participants to wear fully enclosed, flat, non-slip shoes. Please also ensure that long hair is tied back.
